You're just missing the rubbery piece that slips around the viewfinder? If so, B&H has the Canon Eyecup EF for Digital Rebel Series; Rebel Ti, T2 & K2 for $11.

I think so; it claims to be for the "Digital Rebel series" (which includes the XTi), and I found it listed under the Accessories for the XTi, so it's probably the right thing.
