Since apparently their own fleet is all 737s, is it possible that this is being operated for them by someone else? Like, Emirates has no 747s either, but the flights operated for them by Atlas 747s show up with Emirates flight numbers in the trackers.

Right - someone else. But.. on the off chance a 747 gets put in their colors, that'd be great. (But I doubt it).

Most likely a Polar or Atlas bird "acting" as Yangtzee River Express.
I remember a few years back, Gemini ran a white MD11 with the Alitalia call-sign.

It definitely wasn't Atlas or Polar..
From time to time you will see an airline operating with another's callsign . Generally it's done for traffic rights and things of that nature , just like you would see Abex operating as DHL , Atlas operating as Emirates , Flo West or Alitalia. I believe you'll see World operate Lufthansa Cargo , Gemini operate as Big-A ( Arrow Air ) or Lan Chile.

from the quick look I saw it has a dark blue tail with some type of white design and I beleive a blue belly

I caught that Tradewinds-painted 747 coming into 22L at JFK yesterday, right as I was driving down Rockaway Blvd so I couldn't get a photo, of course.

Don't worry, when unrestricted Open Skies is implemented, you'll be able to fly the real Yangtze River Express from LGA to Orlando...
