On a long flight 8+ hours where there is a relief crewmember or crew, do the crew members get credited for the whole flight or just the part they were sitting in the seat flying?

Everyone gets paid their flying rate regardless of whether they are resting i a cabin/crew rest seat or not. The credit for the takeoff/landing usually just goes to the one pilot that performs it.

If you're referring to logbook time as opposed to time on the clock, I'm fairly certain that the time after 8 hours spent in crew rest cannot be logged as the whole reason they have relief crewmembers is to prevent pilots from being in the seat for too long. You can't get credit for time you're not in the seat.
